More fermentation exploits: beet kvass

A home-made probiotic drink.

Typically, beet kvass is made with whey. Since dairy is not an option, I used salt instead. This should only take two days to ferment but as there is no heating in my kitchen and the temperature is cold, this actually took me an extra day (on the last one I placed it above the storage heater in another room). More like a mild tonic than the effevescent drink I was expecting, still...

Pretty to look at, pleasant to drink, and super simple to make (just beets, salt & water). Why not have a go yourselves?
