How to turn cabbage into a feast

I eyed up the cabbage in the fridge, a bit dubious aobut turning it into an evening meal. Then I remembered about 'pressing' it. This transforms it into something silky, moist and savoury.

Shred and wilt your leaves in salt for a couple of hours. Add some sauerkraut (more cabbage!), cloud ears (fungi), hemp seeds, a tomato, lime juice and oil. I added some diced cucumber for extra freshness.

Gone in no time. I am satiated.
