Cacao and beetroot cake

I hoard recipes. They sit in piles on my kitchen worktop. Cometh the hour...
Today was the turn for this cake.

Had some beet juice for breakfast, and grated the rest of the bunch into this mix which also contains brazils and coconut.

Licking out the blender after I'd made the chocolate topping wasn't a bad way to start a Sunday morning.
