Cauliflower couscous anyone?

I had one of those green cauliflowers (romanesco broccoli) in my veg box this week, but didn't really feel like eating it. My appetite's been a bit off these past few days and veg of the brassica family are robust tasting.

Not wanting to waste it I dehydrated it instead so that it would last longer, following a recipe from a blog by Sarahfae that I follow called 'Addicted to veggies'. She happens to be a great photographer, btw. Anyhow, because of the lime green colour, it doesn't look particularly couscous-like in my picture but it handles like it. The couscous has pumkin seeds and a little nutritional yeast in it. I stacked it on top of some radish sprouts for a nourishing meal.
