Apple, celery & carrot with seaweed

Trying to combine my twin ethusiasms for this month.

I was quite pleased to find a couple of seasonal varieties of English apple in the shop yesterday: Red Windsor, and Spartan's - the former were especially good but when I went back for more today, the had all gone. So it was back to Coxes.

I tossed the salad in a cashew yoghurt which is much cleaner than a conventional mayonnaise, and snipped in some fresh channel wrack in addition to a mix of dried seaweed flakes. The avocado rounded off the flavours.
