Sweaty Aubergines

Attempted vegetarian moussaka today, and as it was a lazy Sunday afternoon, I decided to deal with the Aubergines properly for a change.
I normally just say "aye right" and toss them in.
The sight of all the bitterness seeping out of them was quite cathartic, in some vicarious way, although I'm still not convinced that the taste difference makes all the faffing around worthwhile or not...

It was quite tasty though if I say so myself...
