Quiche Of The Day Chez Jackson

You have to be very careful of any "of the day" dish chez Jackson, as it usually means I'm using up what's left in the fridge. Sometimes it ends up as a soup, tonight it became a quiche. Lots of veggies got used up as did some blue cheese that wasn't blue when it started out life as cheddar!

The quiche looked and tasted great!

I do hope I will still be alive to blip tomorrow!
