Crispy Duck in Pancakes

I have been looking forward to tonight's dinner ever since I had my breakfast!
Luke is off today and it's a good job because he has man flu and needs al the recuperation time he can get! The deal is that he can sleep as late as he likes as long as he takes care of putting on the dinner in time for when I come home.
The day at work was ok, although Ali has been off for a couple of days and I miss her. I was thinking about her a lot today and hoping to see her at some point this week.
After work I came home to the smell of duck crisping up in the oven and Luke was getting the impossibly green spring onions and cucumber thinly sliced. We heated up the almost translucent pancakes and stirred the sticky hoisin sauce.
The end result tasted as good as it looks! Sadly it was all over too quickly! I did however get to eat one of my chocolate eggs from the nest Luke bought me, I chose a white chocolate with freeze-dried raspberries trapped inside.
After dinner we watched NCIS:LA and it was a great episode with a cleverly thought up character that we loved. You rooted for him the whole time and there was a lovely happy ending for him.
After tea it was bedtime and Ted came in for a purry snuggle before he went downstairs to sleep.
Today I am grateful for Luke cooking me dinner despite him having man flu!
