You have to hunt these out from international foodstores. I got this from an East Asian one. The water is plentiful and has a richness that isn't present in what you buy in tetra packs. The flesh, as you can see, is soft and pliable. Scoop it out of the shell with a spoon.

I may use this to make yoghurt, I may use it in a raw cheesecake, I may use it as noodles - I just can't decide!
