New Mexican cuisine is known for its hot chile peppers. You can order red chile , or green chile, or Christmas - which means some of both.
These dried red chile arrangements are sold everywhere, in all sizes from a small bunch to a 3 foot long statement. But I have never seen dried green chiles. I guess they turn black and are not very pretty.
