Cauliflower risotto

I wasn't quite prepared for the cauliflower which appeared in my veg. box this week. I was somehow expecting leafy greens.

However, I love it, so in the food processor it went. I actually steamed it briefly with garlic beforehand as I was going to make a sort of mash. But I realised that I prefer it al dente, as I was processing it, and decided to switch my recipe and make a risotto instead. Once I added some coconut yoghurt, it really had the appearance and consistency of standard risotto.

A bit of avocado, herb and yoghurt cream on the side in which to dunk the beans in.
