cooking caterpillars

After breakfast at 6, we were driven to Mfuwe airport where we caught a flight to Lusaka and another to Ndola, where Joyce was waiting for us in a beautiful long yellow dress. She took us back to her house to rest and prepared a lovely lunch for us. It was like coming home, so good to see Joyce and her family again.

While the lunch was cooking, I took some photos of Dorothy doing the washing (all by hand at this tap). Dorothy is the hardest working person I have ever met and cheerful with it, always happy for me to take her photograph.

Patricia was cooking caterpillars and offered to show me how it was done. They are bought in dried form from the market and soaked for a few hours. Then they are fried till crispy (see extra). Patricia was using a charcoal burner outside as every ring on the cooker in the kitchen was being used. Finally she added salt, a couple of chopped fresh tomatoes and some onion and then they were ready to be eaten as a relish with nshima. Being vegan, of course I didn't eat any, but  I couldn't get Alison to try them either..Patricia said they tasted delicious :-)

Later this afternoon we will be saying our goodbyes again and flying off to Johannesburg, overnight to Amsterdam and then back to Scotland on Tuesday.
