Cauliflower cheeze with sunflower seeds

It is customary to use cashews as a basis for a 'cheese' sauce but as I'd used the nuts in experimental custards for the past few days, I wanted an alternative.

I adapted a sunflower/sesame seed mix with miso and nutritional yeast to make a sauce and placed everything in the dehydrator for a few hours. This softened up the cauliflower nicely. Not very pretty to look at, but a decent meal all the same.
