Apple and fennel with macadamia cheese

Am taking a pause from seaweed to focus on apples. I am joining a community event celebrating out native fruit this coming weekend, and sharing a few uncooked recipes.

This is one of them. A rather yummy salad which I perked up with a little star anise in the dressing. It's been such a lovely sunny day today, a light crunchy supper seemed about right.
