Nanaimo bars
I was looking through an old cookbook at work and I spotted a recipe for Nanaimo bars.
Nanaimo is one of the few towns in southern Vancouver Island, and we had a very pleasant stay there with some of Rob's cousins during our summer Canadian trip. It has a charming harbour and wonderful ancient Cedar grove.
It's claim to culinary fame is this little traybake. Think rice crispie cake meets custard cream, with a hint of coconut!
Having spotted the recipe I had to give it a go. It came out pretty well, although it is seriously sweet and not to be indulged in large slices. I probably won't make it again!
