pea soup
Quick frozen pea soup:-
Chop an onion up small and soften in olive oil and butter.
Add medium/large bag frozen peas (quantity flexible) and stir in.
Add about a pint of chicken stock and 2 teaspoons tarragon (dried is fine).
Top up with kettle water till peas just covered, and leave to simmer for 10 mins.
Whizz in batches with about a half pint of cream.
Thin out a bit to taste with more boiled water, heat and serve. Season at table.
Matching sweater optional.
