Mini cheesecakes: a little of what you fancy

These were inspired by the wonderful Heather Paige. They are not as dainty or professional as hers to look at, of course. All the same.

The filling is cashew & mango based and has cardamon in it - one of my favourite flavours. I was going to imitate Heather's creations by adding a chocolate and coconut topping, but it was already sweet and complete enough for me without going the extra step.

I had to keep these chilled today in this mini Indian summer!
