Hassle free supper with butternut squash
Whipping up a fast meal with the aid of a strong blender, has often saved me from not bothering at all. With some left-over squash, I was able to produce this soup in 5 mins.
To reduce the raw starchy taste of squash I added boiling water instead of cold water to the blender jug, then some sage, walnut butter, onion, tomatoes and a pinch of salt & cinnamon. The home-pickled veggies were for added texture.
