Globe artichoke and a plea for help

I have been eyeing up the artichoke flowers growing at the community gardens because I saw their potential for my seed collection photos. Today I asked a woman there if I could go in and take photos.
This was my best photo of the day although I found lots of seeds.

My plea for help is - what is the name of the flower in the extra please.
I have the most wonderful seed photos from it but haven't managed to identify it.
