Simple dessert wih dried apricots and peaches

My sweet tooth led me into the pantry where I spied a bag of dried peaches.

After soaking them with some Hunza apricots I blended them into a mousse with some almonds and rose water. The dessert is not as bright as I expected so next time I might add fresh persimmon into the mix. As it was, I just choppped a few slices for garnish.

I'm now toying with the idea of making raw mince-pies, and will soon have to decide which recipe to go with. Do you know of any?
