Even 1 small pumpkin is probably too much...
to eat raw.
Some of it went into a soup, some of it into a fruit leather, and the rest of it into this dessert. Layers of pumpkin puree, cranberry puree and ginger cashew cream. Not the most elegant creation. I think the dish was too large so the layers collapsed into each other.
I rather think the best thing to do is to cook it.
