Today is probably going to some summer-appropriate combination of hot, humid, and thundery. Fortunately, it is quite possible to to make a summer-friendly, tasty chilled tomato soup. I used both freshly chopped tomatoes and organic tomato paste to ensure I could really focus in on the tomato flavor. There's also carrots, nuts, and mixed (savory) spices blended in.
Honestly, about those carrots, I'm trying to quickly finish them off. We all like carrots and they're relatively cheap, but if there's not a break soon, we're going to get sick of seeing them. Thankfully, the kids do like a variety of veggies and putting carrots on the sidelines for a little bit won't equal starvation for them. ;)
