Ricehead
I like the idea of making lunches in the morning. Less stress than trying to cook with kids under foot (lunch at lunch) and things are fresher when they only have to last five hours instead of twelve (lunch after dinner). That said, I'm taking way too long in the morning. I need to start preparing some of the stuff before bed.
Fortunately, one kid will thoroughly get a kick out of the rice face and the other wouldn't care if lunch looked liked poo as long as it was nummy. LOL
The meat roll actually contains a creamy vegan pesto-ish spread in it. I'm not exactly sure what quantities I used (I was in experimental mode), but it does contain almonds, basil, crystallized lemon, carrot (trimmings from carrot sticks), rice milk, and peanut oil.
Worry not about the rest of the peach (the "shoulder pads"), the kids enjoyed it as part of their breakfast. :)
