When life hands you lemons...

...make cupcakes!

Went to Friend B's house last night and had fresh-from-the-oven lemon loaf that was oh, so yummy.

While I was driving home, I was feeling sour as I thought of a conversation earlier in the day. Whenever I can't let go or process a frustration, I wake up in the middle of the night and go straight to the kitchen to throw myself into a baking project. Coincidentally, my having lemons on the brain had less to do with Friend B's fantastic loaf and more to do with my attitude.

Being sour + leftover lemons = Lemon Cupcakes with Citrus Cream Cheese Frosting.

I do have to thank Friend B for making such a fantastic lemon loaf, otherwise I probably would've overlooked the idea of turning sour lemons into sweet cupcakes that look pretty in pink. :)

**For those who may be thinking, "Dude...that's a lot of lemon" - I, too, thought the same thing. After exchanging the frosting recipe with a different one I like, I have to say it's not overwhelming and actually tastes nice and tangy.**
