Brioche

One of my favourite coffee shops in Edinburgh is Falko, this is my equivalent of Betty's, or the equivalent of your favourite coffee place. I love it. They don't make the best coffee (don't get me wrong, it's not bad) and they don't make scones (my wifes favourite choice for morning coffee)....they make brioche, after all Falko is a Konditormeister, with the most amazing range of breads and gâteau. This is a coffee shop in bruntsfield with an accolade such as the best cake shop from the Scotsman and a stall that frequents Edinburghs Farmers Market.

The stall always has a healthy queue, an inditement of quality and popularity. A vast selection of breads along with my favourite....brioche.

Everynow and then I try to make Brioche myself....ideally I would have somebody have it ready fresh out the oven for when I wake up on a Saturday. Unfortunately I don't live in that world!

So sometimes on a Saturday morning I'll goto the market for the brioche and get home in time to make the coffee made how I like it! However, I'm making the Bricohe myself this weekend giving Hughs recipe a shot from Bread: River Cottage

If your looking to make Brioche, I know of 2 other recipes from previous attempts! One from the Ottolenghi Cookbook and the other from the The Bread Book: The Definitive Guide to Making Bread by Hand or Machine and they dont really come close to Falko (perhaps thats my baking!), although very good....... and then I found hughs pulla bread in the guardian, I'm not sure if you'd class it as Brioche.....but it's certainly a sweet bread worth trying!
