curds and whey
Ok, so waking up at 6am isn't exactly ideal for my first day on vacation, but I had to be downstairs at 7am for breakfast and leave by 7:30am to drive to Shelburne Farms. We had to be at the farm at 8am sharp for a class called "Cheddar is a Verb! Be a Cheesemaker for a Day" We spent the next eight hours hard at work making the days batch of cheese. We turned nearly 5,000 lbs of milk into 500 lbs of cheese by the end of the day. It was a long and complex process with ten steps. This phot was taken after step nine - salt was added and the whey separated from the curds or fingers. After we finished making the cheese we got to see the cows get milked and some newly born calves. The farm sits along Lake Champlain with a beautiful view of the Adirondack Mountains. We walked around The Inn at Shelburne Farms and their surrounding gardens. Then we went back to our B & B to relax a bit before dinner. We had dinner at Bistro Sauce. Dinner was yummy and I had AMAZING melon sorbet for dessert.
