We were having old friends over for dinner so today was spent a) planning menu, b) shopping for menu and c) cooking the menu... I had decided on a Caribbean theme...
Starter - King Prawn in a sweetcorn sauce:
Main course - coconut chicken, with sweet potato pie and spicy corn on the cob;
Dessert - rum and raisin cheesecake / cheeseboard
Happy evening - great company, great wine and good food (even if I do say so myself! :))
Note to self: choose less labour intensive dishes next time
