Fromagerie
Another drizzly wet day! We spent the morning visiting the abbey in the town followed by a very interesting visit to the museum of the Resistance. This afternoon we went to the nearby small town of St Martin du Fresnes to visit the cheese factory of the Combe du Val where from a viewing room we could watch the cheese being made. This man was pressing the cheese and salting the skin to encourage a firm coating and to aid the maturing process.
