Strawberry Cake

Woke up and took my morning antibiotic.

Looked up cake recipes and found one for strawberry cake (pictured), hence the name. The recipe was completely from scratch.

Rewrote the recipe on paper with all of the suggestions from the internet comments.

Went shopping for ingredients with Mom.

Cleaned the kitchen while letting some ingredients warm to room temperature.

Ate a chicken sandwich my mom made for me for late brunch.

Took my afternoon antibiotic.

Called Aunt Geri for her vanilla icing recipe but she suggested using whipped cream instead. I found a good recipe online and tweaked it based on the comments.

Prepared the cake batter with my mom. Put it in the oven for 25 minutes and cleaned the kitchen while it baked.

Made whipped cream.

Took out the three layers to let them cool. Put them in the refrigerator to speed up the process.

Dad came to pick me up and I iced the cake while he played with Millie.

I brought the finished cake up to my mom. She was having an IDS meeting so most of the designers took a piece.

The cake got rave reviews but next time I think I should bake it for a little less time, beat in the whipped egg whites quickly after whipping to make the cake airier and avoid liquid separation, and add more fresh strawberries on top (and maybe in between?).

That said, I still loved the cake and am really proud of it.

Went to Peter's Clam Bar with Dad because he saw that it was renovated in the newspaper. I had a lobster roll for dinner and it was very good. It was more of an upside down dinner, though, because I had cake for dessert first.

Stopped at Old Mill to pick up my nighttime antibiotic then to Park to watch American Ninja Warrior: USA vs Japan. It was epic and the US dominated.

Going to bed now.

Today's Random Thoughts:

I feel like we shouldn't make landfills that stick out of the ground. Instead, we should find land (valleys, canyons) that needs to be filled.

It would make for very clean topographic maps and it would avoid big jutting eyesores.

Who cares about the Grand Canyon anyway?
