A venison pie!
It has taken me a great while to find a venison casserole recipe which I really like, finally I have achieved it, using one from the Booths Christmas Catalogue. It includes quite a large amount of smoked gammon, and I think this is the secret, as it is salty and offsets the rather dry and irony taste of venison alone.
Also half a bottle of red wine, and some mushrooms.
And it has been maturing in the fridge for two days, which has mellowed it wonderfully.
No blackbirds though....
