Papoutsakia
the last of the papoutsakia (= little shoes: aubergine filled with mince sauce) in my deep freeze was cooked this morning
in the spring, i love watching the shelves of my freezer emptying out slowly, to make way for the summer season's new produce
for the recipe, click here - i make a lot of papoutsakia in one go during the summer and freeze them for a quick meal
if it's not in seaosn, i wouldn't cook it, hence i would not be buying aubergine at this stage in the year - the garden will be full of aubergines soon at any rate...
