Wheels In Motion

Today is Open Day at Pann Mill and the mill wheel is in operation, assisted by the high water levels in the Wye. Fascinating to see the workings of it; I came away with two bags of stoneground wholemeal flour, milled on the spot that morning from wheat grown in the Chiltern Hills. Looking forward to baking with it. Advice from the man who sold it me was to mix it with the flour I normally use - "if you just use it on its own, it'll turn out like a house brick"!
