A Very Swiss Dinner
My Mum came to the UK from Switzerland many moons ago when she married my Dad. Mum was a very good cook and as a family we were lucky enough to enjoy a mix of both British and Swiss cuisine (we were eating fondues way before they got trendy in the 70's!)
This very simple dish is called Gschwellti - which is pronounced like it is spelt but the 'G' is silent and the 'W' is pronounced as a 'V'.. ("Schvelti") :-)
It is something we used to have at home a lot and we always loved Gschwellti night! Basically it is one of those dishes where very simple ingredients come together to make a magical combination.. like tomatoes and basil or strawberries and cream.
It's a kind of take on a baked potato with cheese, except the potatoes here are boiled in their skins and then eaten piping hot with butter melting over them, a little sprinkle of salt and a chunk of your favourite cheese. Delicious! ..of course, if you can get Swiss cheese - even better :-)
Anyway, Mr M isn't big on cheese but he is away again at the moment and I am making the most of it!
