Mango & Coconut balls
The sun is out and my mango is ripe - finally. It's been sitting 2 weeks in the fruit basket.
I like to keep some home-made sweet treats in the house for times when a piece of fruit just isn't enough. I've been eyeing up this recipe for a while and today was the day. So, fresh mango, coconut shreds, coconut oil, lemon zest, lime juice and a little honey were all mushed up. This makes a gorgeous mousse. It can be served as a dessert in a dish. But since I had these rolled-up balls in sight, I had to get them a bit more dough-like. Ground chia seeds and lucuma came to the rescue, et voila!
With their slightly acidic flavour, they taste bright and fresh. Lovely with an afternoon cuppa.
