Lemon Curd

Discovered lemons lurking in abundance in the fridge. What better way to use them up than to make a few jars of lemon curd a la Euber's mum's recipe. Only problem now .... the eating of it. I was trying to work towards the healthier January diet after what has seemed like a never-ending period of festive eating!

In case you are wondering, the best way to eat homemade lemon curd has to be with Philly, spread on a digestive, then a layer of lemon curd on top - known as the 'full bhoona'.

Today the weather is yet again dire, but my mum and dad have the right idea - they're flying out to the Caribbean for their annual cruise! Bonne Voyage to them - see you in a couple of weeks!

Me, well I'm taking down the decorations, doing a general tidy/hoover, maybe fit in a nifty second coat of paint for the study, before heading across the road to Killerqueen and SD's for another post-Christmas games night. A'desk is around tonight, so there will definitely be Escape from Colditz on offer. Guess which part he always plays?!!!!!
