Kombu broth

This seaweed is sourced in Scotland. I love the fact people are still harvesting this much ignored but fantastically mineral rich ingredient. I rely on it for Winter warmth.

Shitake mushrooms are great immune boosters, besides tasting delicious. I've added shredded carrots and sweet potatoes to this broth, along with sping onions and ginger. Finally a dash of sesame oil and a bit of chilli. Altogether, a wholesome and fortifying bowl.
