Caravan cake...
We're off on another caravan break tomorrow and the trip demands a special caravan cake.
Drive to the campsite, unhitch the van, put up the awning, put the kettle on and have a cup of tea and a slice of cake!
This recipe was sent over by my Canadian cousin, and it is so strange that it has to be tried.
Mix 2 cups good quality full fat softened ice cream with 1 1/2 cups of self raising flour. Bake for about 45 minutes in a greased loaf tin in a 175 degree oven.
I'm not too sure about how it will work, but I'll let you know tomorrow.
