My two jars of starter were not in good condition when we got back from the Pyrenees :( I threw one of them away completely and recovered two grams from the other to restart it in a clean jar. It was going gangbusters by yesterday, so I started a loaf, put it in the fridge overnight, and baked it this morning. I kept it simple and used only the T80 flour I bought from the farm in the Ariège a fortnight ago. New starter, new flour: what could go wrong? It's not perfect (a bit underproved), but it turned out pretty well , and it tastes good. I had some for my apero with jamón and tomato. Yum.
No Belgian chip van this evening, as Alexandre's van has broken down. I can't say I was tempted anyway, after last week. Meanwhile S is back in the Pyrenees communing with goats and chatting to goatherds in Catalan. I hope he's going to come back with some lovely cheese. Matisse has been kittening. Manic play, crashing for a few hours, more play, snuggling and purring. She's still limping, but only when she remembers :)
