Samphire

It is hard to grow, and not often seen even in the few specialist greengrocers that are left but when I get the chance I try to buy it.

Samphire, for those that don't know, is described as a "salty and crisp sea vegetable" and can be eaten raw or very quickly cooked (three minutes maximum).  It doesn't freeze well (too much liquid in it ) but it is great mixed in prawn or crab salads (see my extra photo)  , added to tartar sauce , used as a dressing for fish or as part of a pasta dish.
