Brie!!
We are off on holiday next week, and I just couldn’t go and leave without seeing if my Brie had made any progress towards becoming…..Brie!
It still felt quite firm to me, although it was of course cold from the fridge. There was a slight feeling of softness underneath though. So I unwrapped it, and cut it in half. To my amazement and total delight, it has matured ! I tasted a little that was stuck to the knife and it tastes like….Brie!!
You may think this is to be expected, but I am such a newbie at making cheese that it feels like a gold medal. It’s the first ‘proper’ cultured cheese I have tried, and having waited since March 22nd I was beginning to feel it wasn’t going to happen.
Anyway, we will now take it away with us, and inflict it on my sister and brother in law. They are great cheese lovers so it will be a real test of quality. Maybe on Saturday?
