Mozzarella
My first cheese!! Andrew bought me a kit for Christmas which teaches 20 cheeses, I thought I should start with one we will (hopefully) enjoy eating!
Making the curds was delightful! They only took seven minutes to set at 30C, and then I cut them up. They were heated to 40C which tightened them up a lot, and then strained in the muslin. There was another heating phase to make the curds soft so they could be formed into balls…more or less.
Now they are in the fridge and I think we will try some in a toasted sandwich with sun dried tomato paste and bacon. Surely that will be nice?
