My first attempt at a gluten free Christmas cake

Recently I offered to bake a gluten free Christmas cake for Woodpeckers, as she had made a normal Christmas cake specifically for me some weeks ago, which she won’t be able to eat. When fellow Blipper Sheol offered me some advice about how to use gluten free ingredients I bit the bullet, and today was the day. I used a traditional recipe by Delia, but substituted gluten free flour and added a small amount of Xanthan Gum. My choice of ingredients was also slightly different to the original recipe but hey! In can’t go too wrong.

I generally enjoy cooking although I am a bit messy at first when I try any new recipe. I will follow the methodology and then in future I’ll vary it according to my whim and the ingredients at hand. Today was no different but by checking exactly what the ingredients were and the pathway of the recipe I managed to get to this point, although it was a bit of a slow process.

Just before putting the cake mix in the oven to bake I suddenly thought that I should grab a picture of for my blip. So here is the final mix replete with a wooden handled spatula ready to spoon it into the cake tin. Fingers crossed that the recipe is adaptable.
