Supper prep.  T decided chicken pot pie was on the menu.  Using Samin Nosrat's recipe from Salt Fat Acid Heat.  It was very good, and very rich.  

He: I'm not sure whether to use all the roux
Me: She worked at Chez Panisse, you can't argue with that.

All the roux went in.  :-)
