Cheese-Making in Semsales

It always makes want to cry, especially the chorus... Some kinds of music really touch your soul, don't they.

You can see big cauldrons of cheese being made on the lower left. The two boys above are stirring something called Vin Cuit/Raisinée. It's a mixture of pears, candid sugar, white wine, spices and cooked for many hours in huge cauldrons until it becomes a rich dark brown. In the canton of Fribourg (where we were), they add mustard to make a sweet and sour spread that they put on slices of a special bread called Cuchaule.

I love the group of bell ringers. They hold huge cow bells, making them ring by hitting their thighs with every stride! Don't you love the traditional costumes too, worn by the men, women and children.
