Today’s the day …………………… for courgettes
 
Thanks very much for all your many suggestions yesterday of what I could do with my abundance of apples.  Today, it was all about courgettes.
 
I’ve blipped a couple of recipes before that I made today, namely Courgette Soup and a Mary Berry Quiche, where I substituted courgettes for spinach.  I tried a new one today (also a Mary Berry) for a Courgette Loaf.  It’s cooling off on the rack at the moment, so I haven’t actually tasted it yet – but it looks good.
