Dessert Delight

After a busy few days, we enjoyed the luxury of a stay at home one. First thing busy with composing an important tricky email response. Once complete it was lunchtime. And so we agreed to our day off!

Made an excellent vegetable 'tagine' in my newish Ninja Speedi. Aubergine cubed and air fried at the top, potatoes and veg steamed below. All well spiced. It came out brilliantly. The Cantaloupe melon (blipped) was the icing in the cake.

Completed my postal vote and will dispatch tomorrow. Came down.to the least bad option.

Very very comfortable temperatures today. Wish it was always like this.
