Selkirk Bannock

We brought a Selkirk Bannock back from our holiday.  A bannock is a type of fruit bread that is found mainly in Scotland and other places throughout the UK and Ireland.

The Selkirk Bannock is particularly famous.  It's made from a recipe well over 100 years old which involves a long dough fermentation which apparently produces wonderful flavours.  It is best served sliced with lots of creamy butter and is also nice toasted.

When Queen Victoria visited Sir Walter Scott's granddaughter at Abbotsford she was reputed to to have taken her tea with a slice of Selkirk bannock.
