Starters
I have neglected my sourdough starter for a couple of months, it sat in the corner of the kitchen, unloved and uncared for. So, on Monday I poured off the brackish water (it's alcohol really) and gave it a feed. I fed it again yesterday morning and, in the afternoon, I started a sponge. This morning, I added the rest of the ingredients and I've just taken this loaf out of the oven. More evidence that starters don't need pampering - anything that I can ignore until I need it is playing to my strengths.
