Marmalade
Well I must say, it’s very exciting making marmalade and when you go on the internet for help there are SO many variations and so many helpful theories. It’s like joining a secret cult, i can’t imagine why I have never done it before.
I chose a recipe from India Knight’s blog HOME. The key thing in this recipe is that you boil the oranges the day before, or before in any case, so they are easy to handle when they cool and cutting the peel is very easy. I did have some issues getting it to set and I think that was because this giant Le Creuset pot didn’t have high enough sides to prevent it boiling over at high boil. I need to get a preserving pan that works on induction. I have an old aluminium one that doesn’t. I oddly ended up with a lot of jelly and think I might have put too much peel in the jars. Any how - all very delicious.
Apart from that i didn’t get much done today! I went to Pilates and then to pick up a few plants to go in my tubs for spring…mainly low cost multiples that will bulk out but I bought a large hamamelis for by the gate. It was reduced because the season for it is over.
I cooked a Nigel Slater lamb shank recipe for dinner.
