Making a sticky ginger cake
I haven’t made a cake for years. Tomorrow the singing group I joined are wassailing. We meet in the training room at the city farm, and apparently we’re going to the orchard to sing to the apple trees, and bang saucepans, in order to wake them up and get them started with their growing. This is (possibly?) a West Country/cider growing area thing - certainly I’d not encountered it before, as a Londoner.
I haven’t tasted the cake yet, but I’m hoping it’s nice. It’s a Jamaican recipe and has a lot of treacle, masses of ground and stem ginger, and different spices, including freshly ground nutmeg, which I love:)
